In 2011, we fortified our first barrel of Cabernet Franc, laying the foundation for our Solera system. Each vintage has contributed a portion of wine to this traditionally aged and fortified dessert wine. Now, in 2024, our Solera comprises over 20 barrels, encompassing 12 years of our winemaking journey. We distill a small portion of our wine into brandy; this brandy, distilled to 110 proof, is added to the barrel aging process to maintain an optimal alcohol level of approximately 18%.
