Our 2025 Riesling, made from 100% Riesling grown at Cool Ridge Vineyard. The grapes were hand harvested on September 14th, chilled at 35 degrees and cold pressed with whole clusters to create nuanced delicacies with minimal skin contact. The fermentation spontaneously started with native yeast in stainless steel and slowly fermented at cool temperatures. At the end of fermentation, the wine stayed on the less until bottling to add textural complexity as a complement to its minerality.
