After gentle pressing and settling, spontaneous fermentation occurs at low temperatures to maintain vibrant aromatics. The wine ages on its lees, gaining a creamy texture while keeping its bright character. Waves of citrus and stone fruit move across the palate and fade into a clean mineral finish.
