This blend consists of 70% Chardonnay, 15% Albariño, and 15% Riesling, harvested in early September. The grapes were chilled overnight at 35 degrees, destemmed, and cold-pressed. The juice was settled in a tank for two days before being racked cleanly to another tank. Fermentation began spontaneously with native yeast. The lees from all three varieties were included throughout the aging process to enhance textural complexity.
