A blend of 90% Pinot Blanc from Bohemia Manor Farm and 10% Muscat from our Home Vineyard. Hand harvested, both varieties were destemmed, the muscat was immediately cold pressed and the Pinot Blanc was put into the amphora with its skins. After 21 days of skin contact, the fermenting pinot blanc was drained off the skins and pressed to a stainless steel tank. After fermentation, both wines were aged on their lees until being blended for bottling. Bright fruity and floral, the acidity awakens the pallet and rounds out with some waxy and bitter notes.
