Hand-harvested Riesling on September 9th from Cool Ridge Vineyard in Hagerstown MD, the grapes were chilled to 35 degrees and cold-pressed with whole clusters to craft nuanced delicacies with minimal skin contact. Fermentation began spontaneously with native yeast in stainless steel, slowly fermenting at cool temperatures. Following fermentation, the wine rested on its lees until bottling, enhancing its textural complexity to complement its minerality.
