Hilltop Road brings together 65% Cabernet Sauvignon, 25% Merlot, and 10% Syrah. Each variety was hand-harvested, chilled overnight, and processed separately. The fruit was fully destemmed and fermented whole berry with native yeast in stainless steel, with a small bleed taken from each tank to build greater concentration. After approximately three weeks of gentle extraction through pumpovers, the wines were pressed and transferred to a combination of neutral and once-used French oak, where malolactic fermentation was completed and the barrels aged for 30 months. The final blend was assembled about one month before bottling, bringing together three varieties and vineyard sites into one of our more structured red blends.
